Salmon with a Roasted Vegetable Salsa.
what you need:
1 fillet o salmon (preferably with skin still on)
1 red onion sliced into 1/4" slices
4 large roma tomatoes halved
1 lime
1 jalepeno halved
olive oil
salt
pepper
rice (optional)
what to do:
1. season both side of the salmon with pepper, salt, and olive oil. set aside for grilling.
2. turn on grill to medium-heat, place tomatoes cutside down, onions, and jalepenos cutside down in a grilling pan and cook for about 6 minutes. turn vegetables and cook for another 1-2 minutes. when done, set aside to cool for a bit.
3. place salmon skin side down on grill. cook for 6 minutes. flip and cook for another 1-3 minutes turning the heat on high to get some nice grill marks. as a side note, fillets come in all sizes so please use your best judgement on cook time.
4. roughly chop roast tomatoes and onions. seed and finely dice jalepeno. combine in a bowl. season with 1/4 tsp of salt and pepper. squeeze lime and mix the mixture well.
5. serve salmon on a bed of rice or lettuce, with veggie salsa on top. bon apetit!
